Turkey, Bacon and Avocado Sandwich Recipe

If I go shopping at the grocery store, I must bring home avocados — it’s mandated by a small but critical subsection of an expansive (but unwritten) Girlfriend Agreement that in addition to other stipulations, has outlined strict rules of conduct for me to follow during episodes of Vikings, Arrow and The Flash.

While I’m crystal clear on the consequences of violating the rules of conduct during a Vikings episode, I’ve never tested the limits of the Avocado Clause. Nor would I want to. I enjoy avocados nearly as much as she does and our local supermarket always seems to have a giant bin of them on sale, so that particular clause has always been easy to meet. Not only am I granted a certain (ahem) flexibility during football season as part of the Girlfriend Agreement, I also get plenty of avocados. So… pretty win-win.

One of our favorite ways to use all those avocados (besides guacamole and enchiladas) is on turkey, bacon and avocado sandwiches, usually on grilled sourdough bread but sometimes on ciabatta or telera rolls (which is quickly becoming a new favorite). I hold most sandwiches in equally high esteem but she only really favors a select few. The turkey, bacon and avocado sandwich is right there at the top of her list, just below everyone’s number one, the venerable grilled cheese. But what a sandwich for the number two slot. I mean, grilled sourdough is amazing all by itself. But topped with thick-cut bacon, peppered turkey breast and creamy avocado? With Havarti cheese? Come on. That’s one undeniably delicious sandwich.

Turkey, Bacon and Avocado Sandwich Recipe

Ingredients

 8 slices sourdough bread
 2 tablespoons butter or margarine
 2 mayonnaise
 4 slices Havarti cheese
 4 leaves green leaf lettuce
 2 Roma tomatoes, sliced
 12 ounces peppered turkey
 4 slices thick-cut bacon, cooked
 1 avocado, pitted and sliced

Instructions

Grill the sourdough bread
Heat a grill pan, panini grill or electric skillet to medium heat. Spread the butter or margarine over one side of each slice of bread and grill the sourdough until the bread turns golden and crispy and grill marks start to appear (about 8-10 minutes).

Assemble the sandwich
Spread the mayonnaise on the ungrilled side of each slice of sourdough. On half the slices, layer 1 slice of Havarti cheese, 1 leaf of lettuce, 2 to 3 Roma tomato slices, 3 ounces of folded turkey, 1 slice of bacon (broken into halves) and 4 thick slices of avocado. Top with the remaining slice of grilled sourdough and serve immediately.
